I made these 'healthy breakfast muffins' and they are really yummy! what makes them even better? a serving of vegetables and half a serving of fruit PER muffin. that packs a punch! Bonus: they have the 'boy that avoids vegetables' (Jon) seal of approval.
HEALTHY MORNING MUFFINS
2 c. flour
1 c. wheat bran
3 tsp. baking powder
2 tsp. cinnamon
1 tsp. apple pie spice
1/2-1 tsp. salt
3/4 c. oil
4 lg. eggs
3/4 c. sugar
1T brown sugar
3/4 c. splenda
2 tsp. honey
2.5 c. grated carrots (I used my mini food processor to do this)
1 c. grated zucchini
3/4 c. golden raisins
1/2-1 c. almond slivers
1/2 c. crushed pineapple, drained
Mix all the ingredients except the last 3. Mix well! Add last 3 ingredients. Bake at 350 degrees for 20-25 minutes. Makes a lot of muffins! (made for me: 12 muffins + 3 mini loaves)

Yummy!! I'll have to try these after my no-sugar challenge is over. Have you thought about using honey or agave instead of the splenda/sugar?
ReplyDeleteI have - maybe the next batch. There was some honey in them, but I was mainly concerned with making them such that they were super yummy & Jon would eat them.
ReplyDeleteNormally I wouldn't make something with so much sugar in them for normal everyday consumption (but he's still warming up to the whole vegetable eating thing).
That sounds REALLY good!
